I think the answer or at least part of the reason for Cooke becoming Bowen Cooke is to be found in a notice found in a bound volume of special weekly notices in our archives at Kenilworth. Cooke the CME was continually receiving correspondence which should have been directed to Cooke which was the name of the stationmaster at Crewe at the same time. C J B Cooke thereby issued the instruction that all correspondence be addressed to Bowen Cooke to avoid the inconvenience.
